Menu Plan Monday

I always do a quick inventory of what we have in the fridge/freezer/pantry to plan the week's meals. This week the list to work from included:
dry beans
rice
91/2 dozen farm eggs from a dear lady at church!
2 gallons milk
ricotta cheese
carrots
onions
potatoes
cake mix/icing
in the freezer:
2.5 pounds of cooked ground turkey
1 pound of cooked italian turkey sausage
bacon
sausage
pork roast
whole chicken
I also take notice of staples that we need. On the list this week:
sugar
unbleached flour
cornbread mix
oatmeal
bran flakes
butter
Now I just plug in the menu list accordingly. The forecast the first three days of the week includes lots of cold rain-y weather. So I'm taking advantage of a couple more soup days before it gets warmer!
Monday-
B- Chocolate chip muffins
early dinner-stuffed shells, green salad, rolls
desert-Peeps Sunflower Cake

Tuesday-
B-Baked oatmeal, bananas, walnuts
L-potato soup
D- quiche
Put chicken in the crock pot to cook

Wednesday_
B- granola cereal, milk
L-fried egg sandwiches, grapes
D-chicken noodle soup
(freeze half of the chicken from the whole cooked chicken)

Thursday-
B- granola or cheerios, milk, bananas
(boil 2 dozen eggs for lunch/ friday breakfast)
L-egg salad sandwiches, grapes
D-Baked Penne with Italian Sausage

Friday-
B-boiled eggs, toast
L- green salad, leftover pasta
D-dinner with family, bring corn, and rolls or biscuits

April 6th


for today.....


outside my window...the sun and clouds are battling, but the sun is mostly winning


i am thinking...i need a nap, but it's too late in the afternoon for one


from the learning room...piano, driving, multiplication facts...


i am thankful for...four children recovering from a stomach virus, and that the others are well


from the kitchen...homemade chicken noodle soup for recovering kids


i am wearing...black pants and a grey sweater


i am reading...Multiple Blessings by Jon and Kate Gosselin


i am hoping...no one else gets sick


i am hearing...Abby practice piano


around the house...Abby and I are making plans for planting some flowers, lots of laundry as usual, organization of spring and summer clothing has begun


one of my favorite things...the intense green after a spring rain


plans for the week...baseball and softball practices, yard work, organizing clothes
